These make a great healthy, satisfying snack or appetizer. Or add a salad and make it lunch.
1 slice of bread (I like a sourdough or harvest grain for this recipe)
2 tablespoons Herbed Goat Cheese
1/4 cup Cucumber Ribbons
1/4 cup Cooked Shelled Edamame
Flaked Sea Salt
Make zucchini ribbons.
Cook edamame according to package instructions.
Spread Herbed Goat Cheese on toasted bread. Top with zucchini ribbons and edamame.
Sprinkle with flaked sea salt, such as Maldon or a Fleur de Sel.
