This simple creamy pasta can be served warm or room temp. It’s a great great weeknight meal that can be ready in under 30 minutes. Since it’s just as delicious at room temp it also is a great make ahead dish for cookouts. Try this instead of the old pasta salad with Italian dressing. It serves 4-6 for main course and 8-12 as a side dish.
1 lb package Casarecce Pasta (cooked al dente)
1/2 cup Herbed Goat Cheese
1/4 cup Crispy Prosciutto
1/4 cup Crushed Pistachios
2 tablespoons Italian Parsley (thinly sliced)
1 Sea Salt
Pre-heat oven to 350.
Cook pasta to al dente. Reserving some pasta water.
While pasta is cooking tear up prosciutto into bite size pieces and place on a baking tray. Cook in 350 oven for about 5-10 minutes until crispy. Keep an eye on it the first time you make this so you do not over cook.
Crush pistachios, just a bit. I just put them on a cutting board with a paper towel over them and hit gently with the flat side of a meat tenderizer.
Put pasta in serving dish and mix in Herb Goat Cheese. Stir to coat, adding olive oil, and salt to taste.
Top with crispy prosciutto, crushed pistachios, & parsle
