Zucchini Tacos
A family favorite, well at least Kendra and I love them. The original recipe was zucchini, now we have also started making then with eggplant, which Jodi and I love. so pick your favorite partner, sister, flavor and get grilling!

INGREDIENTS
2-3 Zucchini (sliced about 1/2" thick)
8 Street Taco Corn or Flour Tortillas
8 tablespoons Picnic Chipotle Sage
1/2 cup Feta Cheese
Olive Oil
INSTRUCTIONS
Slice zucchini 1/4” strips cut on the diagonal. Toss with salt and set to side.
Crumble cheese and set to side.
Line a colander with paper towels and press excess water out of zucchini.
Toss zucchini with oil and grill. Heat tortillas on the grill while your at it.
Spread a little Chipotle Sage in each tortilla. Top with 3-4 zuc’s, and some crumbled cheese.
